Ingredients for Pate Brisee
125g wheat flour
70g unsalted butter
10g egg yorks
8pcs canned pear

20g icing sugar
2 - 3 SERVINGS
1. Place all the ingredients for Pate Brisee in the bowl of a stand mixer until dough comes together smoothly.
2. Roll dough out on floured surface until about 3 mm thick. Mold dough into baking dish. Place the pear slices into the lined pie dish.
3. In a mixing bowl, stir egg, cream, icing sugar and salt. Pour mixture into the lined pie dish. Bake at 180 degree C for about 40 minutes.
4. Brush the pie with the nappage so it has a nice shine to it.
