Kitsune Udon


1 pack Udon noodle
10g x 2pcs Narutomaki (Japanese fish cake), thinly sliced
2pcs Kitsune (Japanese fried beancurd)
2g leek, cut into bite-size pieces


2g Shichimi Tongarashi powder (Japanese mixed spices)
2g spring onion, finely sliced

Ingredients For Udon Soup

600cc water
120g Katsuobushi Bonito fish flakes
10g sugar
6g salt
6cc Kikkoman soy sauce
30cc Kikkoman light soy sauce




1. Boil water and heat Udon noodles. Drain the Udon and into the bowl.
2. In the meantime, boil water in a pot with Bonito fish flakes. Drain the soup and add in the sugar, salt, Kikkoman soy sauce, Kikkoman light soy sauce when the water boils.
3. Pour the hot soup over Udon noodles. Top with Japanese fish cake, fried beancurd and leek.
4. Garnish with Shichimi Tongarashi powder and sliced spring onion.
