Both Master Chefs, Tsuzuki and Koesuka have more than 20 years of Japanese culinary experience between them. They complement each other very well by creating new and signature dishes individually and sometimes together. Master Chef Tsuzuki's creations are considered fusion because of his clever use of various kinds of homemade sauces and Western inspired dishes such as Carpaccio and miso cheese fondue. But his cooking is based on traditional Japanese method using stocks from bonito and kelp, and other ingredients.
